How to make a buttermilk substitute ?

When shopping for buttermilk you will want to look at the label and if it has salt in the buttermilk, you may want to cut back on the salt in any recipe using buttermilk.

If you don't have any buttermilk on hand, you can do what my mother did and make your own.

Place 1 Tablespoon lemon juice or 1 Tablespoon white vinegar into ¾ cup of whole milk at room temperature.

This milk is called “clabbered milk” and can be substituted for buttermilk in most all recipes. The clabbered milk is not as thick as buttermilk and therefore the batter will not be as thick. You may need to add a small amount of additional flour to the specific recipe.
